From Entrees of Love written by Eileen Shoals

1 lb. Medium to Large Prawns (pre-Cooked, peeled and deveined)
1 Cup Cilantro, chopped
1/2 Cup Red Onion, diced
1 Cup Tomato, diced
1 Tablespoon Cajun Seasoning
1 Teaspoon Salt
1/2 Teaspoon Black Pepper
1 Medium Orange sliced in half
1 Medium Lemon sliced in half
2 Avocados
Loose Spinach Leaves, washed

In a Medium Bowl, mix Shrimp, Onion, Tomato, Cajun Seasoning, Salt and Pepper. Squeeze 1/2 Orange and 1/2 Lemon over Shrimp. Be careful to remove any seeds). Cover and place in refrigerator for 2 hours. Stir before serving. Serve on top of raw Spinach Leaves. Garnish with Avocado slices and slices of remaining Orange and Lemon.

*For a Special Kick, add Cayenne Pepper when seasoning.
